Almond Lemon Pound Cake recipe, a moist bread that’s a perfect compliment to any party, topped with a sweet lemon glaze and sliced almonds. It’s a light dish that is dairy-free and soy-free!
I promised to share some of the recipes from our gender reveal party, and this Almond Lemon Pound Cake recipe was truly a hit. We’ve been focusing on being good to ourselves this year, and part of that has to do with how we cook, what we eat and indulge in. Being that this was a party, I definitely wanted to add some sweet things to our spread, but without going crazy overboard, which is why this cake is so refreshing! It’s made dairy free, with wholesome ingredients and okay, just a bit of sugar. 😉 So, whether you need something to whip up at home (great for breakfast, brunch or a light and moist dessert!), or you’ve got a party coming up (I think it makes the perfect addition to a gender reveal party or baby shower!), this pound cake recipe is a recipe you need to keep on hand. 😉
We actually kept the overall theme of the party rather wholesome, in the style of light hors d’oeuvres or a great start to a brunch. I wanted to have something for everyone, including all of the dietary limitations and restrictions, so with a large dish of fresh vegetables and homemade herb white bean hummus, a light and airy cinnamon brown-sugar popcorn and some sliced cheeses to snack on… there was a wide variety of finger foods. We added to the array some fresh cut fruit and pretzels to dip into cream cheese topped with caramel drizzle (okay maybe not the healthiest, but not too bad 😉 ) and created a fruit infused punch (made with cranberry juice and sparkling water or ginger ale, plus a variety of chopped and sliced citrus fruits and cranberries)! Okay, so now on to the Almond Lemon Pound Cake recipe! (Which seriously received some of the highest compliments of the evening!)
Since we’re used to using almond milk as a non-dairy, higher calcium milk around our house, I thought using it would be the perfect way to include a dairy-free and lactose free recipe to our event! With Silk Almond Unsweetened Vanilla which has absolutely no cholesterol and no saturated fat, it’s the perfect ingredient for a light and airy dish.
- 1 1/2 cups flour (use your favorite, white, wheat, coconut flour, almond, etc.)
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 cup honey
- 1/4 cup coconut sugar
- 2 tablespoons lemon zest
- 3/4 cup Silk Unsweetened Vanilla Almond Milk
- 1/2 cup coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract1 teaspoon fresh lemon juice
- 3/4 cup powdered sugar
- 1 1/2 tablespoons fresh lemon juice
- 1 teaspoon almond extract
- 3 tablespoons sliced almonds, for garnishing the loaf
- Preheat oven to 350° F. Coat your bundt pan with cooking spray to prep.
- In a large bowl, whisk together the flour, salt, and baking powder. In a small bowl, combine honey and coconut sugar. Add lemon zest by rubbing through with your fingers until fragrant.
- Into your sugar mixture, add the almond milk, oil, eggs, lemon juice, vanilla, and almond extract.
- Slowly add the wet ingredients to the dry ingredients. Stir until combined. Pour batter into prepared pan.
- Bake for 40-45 minutes, or until toothpick comes out clean. Place the loaf on a cooling rack and cool for 15 minutes. Loosen the sides of the bread with a knife. Carefully remove loaf from pan. Let cool completely on wire rack.
- While the bread is cooling, whisk together the lemon glaze. Combine powdered sugar, lemon juice, and almond extract. Whisk until smooth. Drizzle the glaze of the lemon almond bread. Sprinkle sliced almonds over the bread. Enjoy!
And if you’re planning a baby shower or gender reveal party, then while you’re at Walmart grabbing your Silk Almond Unsweetened Vanilla, pick up some melting chocolate (or candy melts), white burp cloths and potatoes. Totally sounds strange, I know, but trust me, we’ve got a plan! For any gender reveal party, some mustaches and lips in the form of chocolate lollipops are definitely a necessity! All it takes is a mustache and lip molds, which are easy to get your hands on, candy melts in the color of your choice and some lollipop sticks. The rest, as they say, is history. Okay so maybe not history, but pretty easy and self explanatory. Melt the candies (or melting chocolate), pour into the molds, insert sticks and wait for them to cool. Simple, sweet and oh so cute. Plus, my kids had a blast eating them 😉
Now, I’m sure you’re wondering what the burp cloths and potatoes are for right? We wanted a DIY element to the party and something that would leave us a keepsake for babe number four on the way. Enter a DIY stamped burp cloth, which can also double as a small blanket for the newborn stage!! Since buying a bunch of rubber stamps was an expensive (and totally less DIY) option, we created a few simple stamps with potatoes, threw in some ink pads and allowed guests to create custom cloths for our little one!
So whether you’re here for just the Almond Lemon Pound Cake, which is totally a new favorite and something where I just want slice after slice (good thing it’s a light version right?!), thanks for sticking around and hearing more details from our fun Gender Reveal Party!! I’ve found that it makes any job, like planning for a Gender Reveal in just a few short days while still remodeling a new studio space, much easier when I can just run to our Walmart around the corner for what I need.
Since I’ve been sharing about using almond milk in our recipe (which we use at home in our smoothies, cereal, the occasional bottle for Skylar, etc) we also picked up some Silk Dairy-Free Yogurt which while being free of cholesterol, artificial flavors and colors it also boasts plant-powered protein… add in a little of our homemade granola and some fruit, and my kids were in parfait heaven. So might I just add that creating a yogurt parfait bar at our next brunch (or maybe a baby shower that I throw for someone else) is something that is now on my radar! What a fun addition that would be! XO

SILK is my favourite brand of dairy alternatives. My daughter is anaphylactic to dairy products and we looked for a good substitute – I use SILK for all my cooking/baking needs and you would never know the difference.

Oh wow!!! So thankful for good alternatives!!!! When I was little and not quite as allergic as your daughter, but allergic to dairy milk, the only option was goats milk!! I couldn’t drink the stuff then. LOL We always keep SILK on hand now 😉
