“I brought you a little something.” He said the words with eyes sparkling, while the box danced in his hands. And so began my trip down nostalgia lane. It’s amazing to me how a simple scent, a sweet taste, a bold color can carry on it’s back, not only memories, but a feeling. To me, a little box of cranberry bliss is so much more than a bite or two of dessert, it’s more than an afternoon indulgence. It’s a feeling.
While it’s a special thing that my husband surprises me with at random times during the holiday season each year, it goes further than that and never fails to send me in full swing for the Christmas season. Cranberries bring my right back to the days of my childhood starting with Thanksgiving dinner and all the way through to Christmas. Mornings of peeling potatoes and using our hands to mix up a huge bowl of stuffing. Preparing delicious meals with all the fixings… and for my dad and I? Cranberry. It was our thing. We enjoyed it together, got second helpings together. We fawned over anything to do with cranberries in food, like this cranberry baked brie, and to this day they hold a special place in my heart.
I long to recreate some of those precious moments and traditions with my littles and husband as well… and what’s funny is whenever the pages of the calendar flip and the season kicks into full swing, we start to see cranberry bliss popping up on the shelves. My littles are usually the first to excitedly remind me of my love of cranberry and want to share this treat with me. So this year I decided to bring the excitement home with our own home baked Cranberry Bliss Blondies. As a special treat while decorating for the Christmas season I whipped up this easy, but delicious dessert (and perfect coffee pairing) recipe.
One thing I love about this recipe is that it has something for everyone, at least in my family it does.
There are the bold and bright cranberries for me, cake (or the blondie) for my youngest son, white chocolate chips for my oldest, sugar loving son, a deliciously smooth and creamy cream cheese frosting for my oldest daughter, and of course my husband never complains when dessert is mentioned, he loves pretty much anything that I make. 🙂 Everyone can find bliss in these blondies. With red cranberries and white frosting they are such a festive addition to any party table or gathering throughout the entire Christmas season.
- 2 cups brown sugar
- 2 cups Bisquick
- 4 eggs
- 1 teaspoon vanilla
- 1 cup dry cranberries
- 3/4 cup white chocolate chips
- 4 oz cream cheese (softened)
- 1 teaspoon vanilla
- 2 cups powdered sugar
- Juice of 1 lemon
- ½ cup dry cranberries
- 2 oz white chocolate chips
- Mix together all the ingredients for the blondie and pour into a greased 11x13" pan, or two smaller pans.
- Bake at 350 for 30 minutes.
- Cool before frosting.
- Mix together all ingredients until smooth and spread over cooled blondie.
- The frosting will be very creamy, feel free to place in the refrigerator or freezer to harden a little before topping with decoration or serving. Although, they are so good, it's hard to wait, and I rarely do!
- Cut blondie into bars.
- Sprinkle cranberries over the top.
- Warm the white chocolate chips in a microwave safe dish for 15 second intervals and stir in between. Make sure not to scorch chocolate. I only needed to heat mine for one interval.
- Drizzle over the top of the bars.
- Enjoy!
