Made with fluffy coconut jasmine rice, sweet potato, apple and chicken baked together with a sweetly spiced seasoning and all topped with cranberry, it’s a holiday treat that I made in partnership with Success® Rice and it’ll standout anytime!
I don’t know what it is about a meal in a bowl. It’s just intriguing I guess, but it’s like one pot dinners or a smoothie bowl…. the fact that everything is right there, the flavors combining, the pallet dancing; I just want to #eatallthethings in a bowl. This rice chicken bowl is no different. Except for the fact that it is a little different, it’s a spin on the festive flavors of the season all rolled into one great dish!
Am I the only one who does a mental run through the kitchen at around 3pm trying to figure out what’s for dinner?! As of late, my meal planning game is on the fritz and it’s been more last minute decisions for our dinnertime meal. For this rice bowl, I had all of these seasonal flavors on hand already from other recipes and meals we’ve made! Cranberries we’re just waiting to be used up since I made our cranberry bliss bars and a few other fun dishes as well. A few sweet potatoes remained after using a couple in a chili recipe we love. The great thing about using and cooking with seasonal ingredients is that they stay fresher, longer. I only had to pick up fresh chicken to pull it all together for this Cranberry Rice Chicken Bowl with Sweet Potato!
For this recipe, I used jasmine rice for the sweet buttery fragrance and taste, and it’s fluffy, smooth texture. Success® Jasmine Rice is the only boil-in-bag Jasmine rice available, and I’ve been using the pre-portioned, BPA-free boil-in-bags with no measure and no mess for years!! It’s a busy mom’s saving grace at dinner for sure, and a convenient pantry staple of mine. Plus, if you’re looking for a gluten free recipe, you don’t have to look any further because Success Rice is also gluten-free and non GMO.
While I’ve also used their brown rice boil-in-bags (for what seems like forever… back in my younger years of early morning workouts and breakfasts of brown rice and egg whites!!), we love using the Jasmine rice for SO many recipes, and my favorite is to cook it in coconut water for that added boost of flavor and nutrients. It’s the easiest way to quickly have coconut rice on the table, and if you’re feeling extra ambitious, just stir some fresh coconut flakes into the hot rice once it’s cooked. Seriously simple, and seriously you guys… dinner Success is in the bag.® 😉

- 3 Chicken Breasts
- 2 Sweet Potatoes, peeled and chopped
- 2 Granny Smith Apples, chopped
- 1 Tsp Paprika
- 1 Tsp Chili Powder
- 1 Tbsp Garlic
- 2 Tbsp Brown Sugar
- 1/2 Maple Syrup
- Salt + Pepper
- 3 C Coconut Water
- 2 Bags Success® Jasmine Rice
- 3 C Cranberries
- 2 Tbsp Water
- 1/2 C Sugar
- Half Orange
- Preheat oven to 400°.
- Line a baking sheet with aluminum foil.
- Place chicken breasts, sweet potatoes and apples on baking sheet. Top with seasonings, brown sugar, garlic and maple syrup. Place in oven and bake for 30 minutes.
- Pour 3 cups of coconut water into a microwave safe dish and add 2 bags Success® Jasmine Rice. Microwave for 15 minutes.
- Add cranberries, water, sugar and squeeze of half an orange to a pot.
- Simmer over low-medium heat for 15 minutes, stirring occasionally.
- Add cooked rice to the bottom of your bowls, top with sweet potato and apple. Slice chicken breast and add half of a chicken breast to each bowl. Top with cranberry sauce and garnish with a sprig of rosemary if desired.
- Enjoy!
