It’s one of the things we know is a vital force of any relationship, and yet it’s one of the first to take a backseat to carpool lines, music lessons, diaper changes, laundry, dinner making and the rest of the “lists” that come with having a family and kids.

This communication thing that can truly make or break a relationship, it’s something we’ve known – something we’ve worked on and think we do pretty well.
Except for the times we don’t. Except for the times when bruised knees and the plethora of emails are already fighting for attention and it’s been a day or so before we realize real communication has been a slow after-thought.
And even with all the wrangling that parents perform on a daily basis with the precision of a street artist creating their masterpiece, wrangling a date night is something that easily alludes us.
When the kids’ baths begin to feel like a chore, the laundry pile reaches monumental proportions (whether pre or post wash) and the only voices I can remember hearing clearly are the ones singing out the anthems of mama, mama, mama; I take a pen and artfully inscribe date night onto the calendar. A precision move that creates the space and time for us to wrangle date night.
Sometimes though, sitters are hard to come by, or we’re left feeling like we’ve drained our funds of any remaining fun. Sometimes the exhaustion catches up and the thought of driving out where there will be more noise and more questions – something a parents’ day is never in short supply of – seems more daunting than the reward. Sometimes the call of the backyard, our oasis, wins over.
On these date nights, we wear our kids out with extra outdoor play, and let them cuddle up for a movie inside while just beyond the glass doors we steal away moments that are ours. Moments where communication happens without little ears listening in or little voices interrupting.
There is nothing quite like sipping a glass of wine outside on the patio on a warm summer evening, especially when in good company. If I can stroll to a place with a delicious platter awaiting, a glass of J. Lohr Estates Falcon’s Perch Pinot Noir in hand and get some alone time without the cost of being fully alone; it’s a good date night indeed.
To serve up with our glasses of Pinot Noir for date night, we whipped up a simple dish that’s full on flavor. And really, who doesn’t love a delicious waffle fries recipe? When you up the ante with a bit of pizza inspiration, you’ve got a simple summer finger food recipe that won’t disappoint!

Our simple and delicious Pizza Waffle Fries Recipe
Ingredients
- 1 pound waffle fries, frozen
- 1-2 cups marinara sauce
- 1-2 cups shredded mozzarella cheese
- 2 tablespoons Italian seasoning, if desired
- 10-12 slices pepperoni
- Basil chiffonade, to finish
Instructions
- Spread the fries evenly on a baking sheet and sprinkle with Italian seasoning. Bake per package instructions. I like to add an extra minute to the cooking time to get them a little extra crispy before adding the wet ingredients.
- Once waffle fries are golden, remove from oven and build the “pizza” by layering the marinara sauce, mozzarella cheese, and pepperoni.
- Set the pizza in the oven to bake for 5-7 minutes at 350°F., or until the cheese is slightly melted and golden brown.
- Remove the pizza waffle fries from the oven. Top with basil chiffonade, and serve.

Fun time! My husband and I don’t get many alone time together. We do enjoy time by ourselves in the evening on occasions either on the couch watching a show or outside in our back patio. These waffle fries pizza looks good. Definitely going to save it for later.
