Chicago chef Edward Sura was quoted to say, “THE COPPA ROAST IS THE MOST DELICIOUS MEAT YOU’VE NEVER TASTED.” The coppa roast isn’t a regular item on the menu because only two can be butchered from a hog. In-the-know diners, however, ask for it when they visit or call beforehand.

If you can’t get your hands on a Pork Coppa Roast, you can also use Pork Butt (also known as “Boston Butt”) or Pork Shoulder Roast… both from part of the pig shoulder (which is where the Coppa Roast is found as well!). Sound confusing? It kind of is, but while all from the actual pork shoulder, the location of the cut means that some of the meat had more movement, rendering it a more tender cut.
In order, we prefer Coppa Roast, then Pork Butt Roast, and then Pork Shoulder Roast. But even with whatever cut you choose, the slow cooking method still gives you a deliciously tender result!

Slow Cooker Pork Roast Directions:
Prepare your Slow Cooker by spraying it with a non-stick cooking spray. Cut an onion into slices and quickly layer on the bottom of the slow cooker, essentially making the ultimate tasty trivet. Rub all sides of pork generously with seasoning mix… we’re fans of Omaha Steaks Seasoning and use it on basically all of our meats, but is great or you can use almost any meat seasoning mix.
Pour a couple cups of broth into the bottom of the slow cooker, you DO NOT need to cover or even pour it over the roast, we’re just adding some under the roast. Cover slow cooker, turn heat to low, and cook for 8-10 hours. When done, you’ll be able to pull the meat right apart.
How Long Does it Take to Make in the Slow Cooker?
Eight to ten hours on LOW or if you really need to save time, four to six hours on HIGH. Though low and slow creates the most tender roast. If you’re pressed for time, though, you can also make it in a pressure cooker in just 30 minutes!

Slow Cooker Pork Roast
This slow cooker pork roast is full of flavor, insanely tender and so easy to make with just 4 ingredients!!! The perfect slow cooker pork roast recipe for that fall-apart tender shredded pork.
Ingredients
- 2 lb. Pork Coppa Roast (or pork shoulder or pork butt roast)
- 2 Tbsp Seasoning Mix
- 1 large sweet onion, sliced
- 1 C of broth (chicken or vegetable)
Instructions
- Grease a 6 qt. slow cooker with cooking spray.
- Place onions in the bottom of your slow cooker.
- Rub pork with seasoning blend.
- Pour broth over onions. Place pork on top of onions.
- Cover and cook on high for 6-7 hours or low for 9-10 or until meat pulls apart easily with a fork.
- Remove pork from slow cooker and shred meat, removing any large pieces of fat.
- Save some of the juice to spoon over pork when serving.
Notes
This is delicious served with a side of vegetables and mashed potatoes, you can spoon the juices over the potatoes. You can also serve with crusty bread for dipping.
You can also double the recipe with 2 roasts or a 4-5 lb roast and save the leftovers for taco night, bbq pulled pork sliders, and more! Great for family meal planning.
